It’s Slow Food season in Krakow, as the Slow Chef Festival begins!

From June 5, some of Krakow’s best chefs will gather for five months at Targ Pietruszkowy (Parsley Market), one of the Slow Food Earth markets, to promote good, clean and fair food.

The Slow Chef Festival is the latest initiative of the Convivium Slow Food Krakow and the Slow Food community of Targ Pietruszkowy. From June to October, the market will host live culinary events, each hosted by two chefs dedicated to Slow Food values. They will prepare dishes using only produce available from farmers and producers selling at Targ Pietruszkowy – Krakow Land Market.

“Our aim is to build bridges between producers of good, clean and fair food and representatives of the gastronomy sector, as well as to promote the ideas of Slow Food in the local community of Krakow – explains Szymon Gatlik, leader of Slow Food Kraków. It will be a very seasonal and local cuisine, but also with a strong and important message, because the products used are produced in a sustainable way, with respect for nature and its biodiversity.

The list of chefs participating in the Slow Chef Festival includes: Łukasz Cichy (Biała Róża restaurant), Michał Cienki (Plate pastry workshop), Grzegorz Fic (Albertina Restaurant & Wine), Marcin Filipkiewicz (Copernicus restaurant), Paulina Gulajska (Dworek Goścawnica – Szcawnica in Zdrój), Miłosz Kowalski (Halicka Eatery & Bar), Wiktor Kowalski (restaurant Solna 1) and Marcin Sołtys (Filipa18 Food Wine Art). Soon more names will be announced.

“Working with top quality products of known origin is pure happiness for any chef,” says Łukasz Cichy, chef at Biała Róża restaurant. – In addition, in the case of the Targ Pietruszkowy market, we also know the producers personally. It is a “seal of guarantee” for us and translates into positive emotions in the kitchen. It’s no secret that you need a lot of “heart” for food – from planting and growing, preparing and cooking, serving on a plate. This “heart” factor can be easily achieved with high quality products.

The six events of the Slow Chef Festival will take place at the Targ Pietruszkowy market in Krakow, the only place in the city, where small farmers and local producers sell their products directly, without intermediaries, in accordance with the farm to table. philosophy. Through his dedication to promoting sustainable agriculture, Targ Pietruszkowy was invited by Slow Food International, as the only market in Poland, to join the Slow Food Earth Market network, which currently consists of 74 markets around the world.

“One of the objectives of the Targ Pietruszkowy Foundation is to provide consumers with high quality, seasonally produced, sustainably produced food, but also to ensure that our vendors, small farmers and producers, receive fair prices for their food. hard work and dedication – says Karolina Jarmołowska, vice-president of the Foundation. – We also want to promote collaboration between farmers and chefs and encourage them to work together, so that seasonal products from our market are used in restaurant menus. It is great news for us that so many renowned chefs will have the opportunity to taste the delicacies of the ‘parsley market’ and use them for their own culinary creations. “

The first event of the Slow Chef Festival will take place on June 5, 2021 when the cooking stations are taken over by Grzegorz Fic and Michał Cienki. The next very special event featuring the chefs will take place on July 3 and will be combined with the 8th anniversary celebration of the Targ Pietruszkowy market, with other dates planned in August, September and October.
