Eggs are an everyday, everyday food. That being said, I have some ready-made recipes to help you come out of your shell: Brussels sprouts on a griddle with sunny-side-up eggs and a classic Cobb salad with a creamy homemade blue cheese dressing.

Don’t know what to prepare for breakfast, brunch or dinner in a snap? If in doubt, germinate it. This meal on plate is ready in the blink of an eye. Brussels sprouts roast and soften in the oven (the leaves are burnt and crispy – we fight over them in my family) and the leaf becomes the perfect little nest for freshly cracked eggs to cook to sunny perfection. Topped with grated Pecorino Romano or Parmesan cheese for a superb finish. This egg dish will delight your taste buds.

Classic Cobb Salad with Blue Cheese Dressing by Joy Bauer

There are so many delicious salads to dip your fork in, from Caesar to chef’s to create-your-own variety. I always enjoy a good Cobb salad, which is made up of a bit of everything I like including greens, tomatoes, bacon, chicken, hard boiled eggs, avocado, cheese and usually a savory dressing to top it all off. Here I use the grated egg trick to create confetti-like bits and ensure there’s goodness in every bite. Next, I finish with my Blue Cheese Ranch Dressing – it’s rich and creamy, yet light enough to enjoy a healthy, heavy drizzle. Feel free to swap out any ingredient based on your preference or what you have on hand – you can design your own Cobb canvas!
