Grays is the newest cheese board company in Memphis

For Jackie Mau, her new cheese board business is more than just a cheese and cold meats board. Which makes Grey unique is Mau’s emphasis on experience and education.

“For us, it’s about the experience approaching the cheese board,” said Mau, explaining that once a month she offers a cheese workshop to her customers. The next workshop is August 21.

Mau started Grays as a convenience for his Airbnb business. She currently owns and operates several Airbnbs in Memphis, including the Downtown condominium where she hosts her cheese workshops.

“I wanted to give something to my Airbnb guests,” she said.

A few of her friends discovered the cheese boards she was making for her guests and asked Mau to make them as holiday gifts for their customers. “It just started from there,” she said.

The name Grays is a play on words. “Think of ‘grazing’ on cheese platters,” Mau said.

Each cheese board comes with pairings for each cheese, as well as a selection of cold cuts, nuts, fruits, crackers and condiments. The selection ranges from a “Date Night” table for two to a large table that can feed up to 15 guests.

Mau has teamed up with chef and cheesemaker Kurt Mullican.

The two visited creameries across the country, researching and discovering the best artisan cheeses available. Their goal is to offer only premium quality specialty cheeses on their boards.

“It’s a work of art, what he does,” Mau said of the attention to detail Mullican puts into every board he creates.

In their monthly classes, Mullican not only talks about the cheeses and farms they come from, but also provides advice on storage and serving.

“Kurt shares some great tips for introducing people to strong cheeses,” said Mau. “If you’re not a fan of blue cheese, he suggests trying a mild blue cheese with a little butter. It’s a great introduction to blue cheese.

Each cheese board is delivered on a compostable and reusable tray. Orders must be placed 48 hours in advance. Delivery is available throughout the Memphis area.

Mau and Mullican are looking for a space to open a brick and mortar cheese factory.
